Technical definition

Ambient dry-bulb temperature is the air temperature measured by a thermometer shielded from radiant heat and moisture. It is the primary driver of enzymatic and yeast activity: within the working band, fermentation rate roughly doubles for every 8–10 °C rise, which is why dough schedules are only reproducible when room temperature is logged alongside them.

Operational utility

  • Fermentation rateBelow 18 °C bulk stalls and flavour development flattens; above 27 °C gas outpaces gluten and the dough over-proofs before shaping. Log the room and adjust water temperature to hold a constant final dough temperature.
  • Thermal dynamicsRoom temperature sets the starting point for oven spring, butter plasticity in laminated doughs, and set time for custards and gelato bases. Cold rooms harden fats; warm rooms melt lamination layers.
  • Batch normalisationAmbient temperature is the variable most likely to differ between a successful bake and a failed repeat. Recording it converts an anecdote into a reproducible specification.

Measurement protocol

  1. Place the thermometer at bench height, away from ovens, fridges, windows, and direct airflow.
  2. Allow at least 10 minutes for the sensor to equilibrate before reading.
  3. Take the reading at the same point in the schedule each session — typically at mix start.
  4. Record both the room reading and the final dough temperature so you can separate room drift from process drift.
  5. Verify the instrument against an ice bath (0 °C) and boiling water adjusted for altitude at least quarterly.
