Smart Recipe Engine System Manual

The operational reference for converting controlled baseline formulations into scaled production batches, retail-aligned procurement plans and advanced technical execution protocols.

01 · Engine overview & access tiering

One engine, two operating envelopes.

The engine mounts only after a specification is unlocked or opened by an administrator. Standard specifications expose the full four-mode stack; Specialist Dossiers deliberately remove production scaling and retail logistics, preserving complex matrices as static technical manuals.

Locked visitors receive a two-step execution preview. Full ingredient matrices, complete protocols and technical notes remain sealed until access is granted.

02 · Scaling mathematics

Strict proportional transformation.

Primary multiplier

m = (h / y) × s
m
active batch multiplier
h
target headcount
y
stored baseline yield; defaults to 4 only when no yield is recorded
s
number of meals or sittings

Worked production case

A sourdough formula yielding 4 portions must serve 10 people across 2 sittings. The engine resolves m = (10 / 4) × 2 = 5.000. A 1,000 g flour baseline becomes 5,000 g; 620 g water becomes 3,100 g.

Demand10 × 2
Multiplier5.000×

Ingredient mass

g′ = g × m

Every valid component mass receives the same multiplier.

Baker’s percentage

B% = (g / F) × 100

Because component and flour masses scale together, every Baker’s percentage is invariant.

Process parameters

T′ = T · t′ = t

Temperatures and times are never multiplied. They remain specification controls.

03 · Operational mode breakdown

Four controlled execution states.

M-01

Baseline Specification

STATIC · 1.000×

The authoritative formulation state. Ingredient masses are presented in metric units against the recorded base yield, with phase grouping, carry-over markers and the complete numbered execution sequence.

  • 01Uses the stored base formulation without quantity transformation.
  • 02Calculates each Baker’s percentage against total flour mass where a flour basis exists.
  • 03Keeps hydration, temperature and time parameters fixed.
M-02

Portions Engine

DYNAMIC · PROPORTIONAL

Transforms the baseline into a target production batch from headcount and meal or sitting count. Every scalable ingredient mass is recalculated live through one common multiplier, preserving the formulation ratio.

  • 01Accepts base yield, headcount and meals or sittings as whole-number controls.
  • 02Reports the active multiplier, total batch mass and fixed hydration percentage.
  • 03Does not scale oven temperatures, core temperatures, proofing windows or hold times.
M-03

Zero-Waste Retail Logistics

DYNAMIC · UK PACK MAP

Converts the scaled ingredient requirement into standard UK supermarket units. The procurement plan selects the mapped pack size with the lowest surplus and flags material perishable overage.

  • 01Maps eggs, dairy, proteins, flour, sugar, tomatoes and other recognised ingredients to retail units.
  • 02Calculates packs as the ceiling of required mass divided by pack mass.
  • 03Can apply a whole-pack anchor multiplier derived from the heaviest mapped perishable ingredient.
M-04

Chef Mode

STATIC · TECHNICAL DEPTH

Restores the baseline formulation at 1.000× and exposes the full professional annotation layer: component notes, chemical transitions, hydration behaviour, shear limits and critical thermal controls.

  • 01Adds technical notes directly beneath their associated formulation components.
  • 02Presents the complete execution protocol without scaling thermal or temporal values.
  • 03Surfaces critical parameters such as pasteurisation windows, gelatinisation limits and friction factors.

M-03 · Whole-pack anchor algorithm

01 · IDENTIFY

Select the heaviest mapped perishable in the current scaled procurement plan.

02 · RESOLVE

Compute anchor packs × pack mass ÷ baseline ingredient mass.

03 · APPLY

Offer the resulting multiplier as an explicit reversible batch adjustment.
